Egg Curry

Tamil recipe for Egg Curry.
Roasted eggs
- 10 boiled eggs, cut into halves
- 1 table spoon of oil
- 1/2 teaspoon of turmeric powder
- 1 teaspoon of red chilli powder
- 1 teaspoon of black pepper powder
- 1 teaspoon of salt
- On low flame roast the eggs
- Remove the oil from the pan and continue to egg curry
Egg curry
- 3 tablespoon oil
- 1/2 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 3 chopped red onions
- 2 tablespoon salt
- Wait until the onions are done (kind of brown)
- 2-4 green chilli
- 2 teaspoon ginger garlic paste
- 1 teaspoon red chilli powder
- 1 teaspoon garam masala
- 2 teaspoon coriander powder
- 1 teaspoon salt
- 2 teaspoon black pepper powder
- 3 tomatoes, pureed
- Sauté until the oil is separating from the tomatoes
- A cup of water
- Curry leaves
- Add roasted eggs
- Cook covered until happy with the thickness
- Chopped coriander leaves
Serving
- Serve with rice or roti (recipe for roti is coming soon)
