Chole (Chana masala) - Punjabi

Punjabi chole masala.
Cooking chickpeas
- 1 cup of dry chickpeas soaked (chana)
- Put into a kitchen cooker
- 2 black tea bags
- 3 cups of water
- 1 bayleaf
- 1 teaspoon of salt
- Wait for 3 whistles
Chole masala
- In a pan
- 2 tablespoon of oil
- 1 bay leaf
- 2 green cardamons
- 1 cinnamon stick
- 1 teaspoon of cumin seeds
- Saute on low flame
- 1 onion finely chopped
- Cook until the onion turns golden brown
- 1 teaspoon ginger garlic paste
- 2 large tomatoes chopped
- Saute tomatoes until mushy
- 2 green chillies
- 1/4 teaspoon of turmeric powder
- 1 teaspoon of chilli powder
- 1 teaspoon of coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala
- 2 teaspoon amchoor (dry mango powder)
- 1/4 teaspoon salt
- Saute until oil separates
- Add cooked chole
- Simmer on medium flame under cover for 10 minutes
- 2 teaspoons of anardana powder (don't have)
- 1 teaspoon of kasuri methi (don't have)
- 2 teaspoons of ghee
Tempering (Optional)
- 1 tablespoon of ghee
- 2 green chillies
- 1/4 teaspoon of turmeric powder
- 1/4 teaspoon of chilli powder
- 1/4 teaspoon of garam masala
- Saute on low flame
- Add to chole
Serving
- With rice => Chole chawal
- With bhature => Chole bhature
- With puri (Fried bread)
