Buchty (Czech dessert)

Buchty made according to my grandmother's recipe.
Yeast activation
- 21 grams fresh yeast
- 2 spoons of sugar
- 2 spoons of all purpose flour
- 4 spoons of warm milk
- Mix and let double the size
Dough
- 250 milliliters of warm milk
- pinch of salt
- 1 egg beaten
- Mix these three ingredient
- Add
- 500 grams all purpose flour
- 300 grams sugar
- 50 grams melted margarin
- Some lemon zest
- Knead the dough until smooth (10-15 min)
Cheese filling
- 500 grams cheese (in Swedish: kvarg - use Milbona)
- 150 grams sugar
- 2 egg yolks
- If too dry add milk
- If too wet add semolina
- 2 egg whites whipped
- handful of raisins
- lemon zest
- Mix
Plum jam filling
- 250 grams plum jam
- 50 grams sugar
- lemon zest
- Mix
Poppy seed filling
- 500 milliliters of milk
- Boil the milk
- 250 grams ground poppy seeds
- Simmer until thickened, stir frequently
- 100 gram sugar
- two handful of gingerbread
- lemon zest
- pinch of cinnamon
- pinch of grounded clove
Assembly
- Grease a baking dish
- Divide the dough into two parts
- Roll out
- Cut into squares with side of 6 centimeters
- Place a tea spoon of filling in each square
- Wrap each square into buchta
- Place buchta into baking dish
