Bhature dough
- 1 cup all purpose flour (maida)
- 1/4 cup fine semolina (suji)
- 1 teaspoon of sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- pinch of salt
- 1/3 cup of yoghurt (czech note: tvarohu)
- Mix all together
- 3/4 cup of water gradually
- Dough should be sticky
- 2 tablespoon of oil on top
- Take the dough and toss it in the bowl for 4 minutes (makes the dough perfectly smooth)
- Dough is not sticky at all
- Apply oil to not dry
- Let it rest for at least two hours
- Make the balls
- Let rest for 15 minutes
Frying
- Heat the oil to 180°C
- Take dough ball
- Press to flatten
- Use rolling pin to make thinner
- Press the edges
- The top surface while rolling is the bottom in the frying pan
